CLIFTON, Ohio (WKRC) - A local college is teaching future chefs to rescue food that's usually wasted, and this "edible garbage" is helping the Tri-State's needy. Paul D'Agostino and Marisa Martinez attend the Midwest Culinary Institute. In class Wednesday, both made soup that not only tastes good, it's good for you. And where this food comes from is actually anything but typical. It's soup made from somebody else's garbage. Perfectly edible vegetables, if not used by a restaurant or grocery store would get tossed out, but instead here it becomes two tons a year of produced, edible, wholesome food. Nathan Crook is a cultural anthropologist and instructor at The Ohio State University agricultural campus in Wooster who researches culinary history and traditions in the Midwest and Ohio. In his recent book, A Culinary History of the Great Black Swamp, Crook explores the once uninhabitable and densely forested wetland region of northwest Ohio known as the Great Black Swamp, which covered 1,500 square miles. In the latter half of the 19th Century, the region was drained and settled by immigrants who brought with them their own cultural and culinary traditions, many of which can still be experienced through the area’s seasonal festivals.
Brooklynn Mieczkowski, of Columbus, Ohio, was ordered to pay more than $10,000 after investigators with the Ohio Bureau of Workers' Compensation recorded surveillance video that proved the culinary student was improperly collecting workplace injury benefits. Her activities in culinary school included meal preparation training, which involved standing for up to three hours at a time. Although she did not appear to have an injury while attending classes, she used a cane each time she attended a hearing at the Ohio Industrial Commission and at her doctor's office.

Most students are required to live on campus with a meal plan for their first two years at Ohio University. With three active dinning halls, how well does Ohio University cater to the dietary needs of their students, specifically their vegetarian students? Ethan Shultz, freshman fine art major, has been a vegetarian for the past five years and states that he is more satisfied eating in the dinning halls, particularly the one in Jefferson Hall, than he did while living with his parents. However, vegetarian of three years and freshman, Veronica Urbanik has more of a struggle in the dinning hall. She that her needs are not being met due to the limited dinning selection offered to her.
All these kids were so passionate about serving residents. When Senior Village Management Regional Dining Service Trainer Lisa Grosch asked about the mission statement all the hands went up and they wanted to show the video they took of themselves singing their mission statement.
